Ever just get that feeling for a doughnut but can’t be bothered to make a yeasted dough, heat litres of oil and stress over burnt lumps in you pot? Yeah, me too.
These doughnuts require no kneading, proofing or even yeast; they are made with wholesome ingredients and are naturally sweetened making them the perfect mid morning snack or quick brekky!
As with all my recipes these are plant based and totally nourishing for the soul, planet and your body, so everybody wins.

1 1/4 cup all-purpose white flour 1/2 teaspoon salt 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon cinnamon 1 medium chopped apple 1 large banana 1/2 cup and 3 tbs soy milk 1 tbs Apple cider vinegar 1/4 cup maple syrup 2 tablespoons coconut oil
Method: 1. Preheat the oven to 180*C 2. Begin by sifting the flour then mix with the remaining dry ingredients and finely chopped apple 3. Next melt the coconut oil and in the mean time mix the milk and ACV then combine with the mashed banana, oil and maple syrup then fold through the dry ingredients 4. Pour the batter into 8 doughnut rings or 8 cupcake cases and bake for 15-18 mins 5. I topped mine with a lemon + vanilla icing made from 4 tbs of icing sugar, 1 tbs lemon juice and a splash of vanilla and toasted hazelnuts... perfect!
